4 large eggs 1/4 cup cottage cheese 1/4 cup shredded cheese (such as Monterey Jack or cheddar) 1/4 cup diced cooked bacon or ham Salt and pepper to taste
In a blender, combine eggs, cottage cheese, shredded cheese, diced bacon or ham, salt, and pepper. Blend until smooth and well combined.
Pour the mixture into greased muffin cups, filling each about two-thirds full.
Bake in a preheated oven at 375°F for 15-20 minutes, or until the egg bites are set and slightly golden on top.
